Steps

Cook the rice according to package directions.

Cut the spring onion into rings. Wash the bell pepper and cut into strips.

Cut the chicken breast into cubes.

Heat the olive oil in a wok or frying pan and stir-fry the chicken breast for about 5 minutes.

Add the bell pepper and peanuts and stir fry for about 5 minutes.

In a saucepan, combine the soy sauce, red wine vinegar, sambal and sugar and bring to a boil.

In a bowl, stir the cornflour with a dash of water and stir into the sauce with a whisk. Pour the sauce over the chicken and vegetables and stir well. Serve with the rice and garnish with the spring onion.
