Let the blueberries thaw.

In a bowl, whisk the coconut flour with the melted coconut oil, coconut milk, honey and egg until you have a nice smooth batter.

Peel the banana and cut into slices.

Heat the olive oil in a frying pan. Spoon the batter into the pan, using about a tablespoon of batter per pancake.

Fry on one side until bubbles form on top, then carefully flip and cook the other side.

Stack the pancakes on a plate and divide the banana and blueberries on top.
