Steps

Rinse the lentils under cold water and set them aside.

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.

Add the minced garlic, cumin, smoked paprika, and turmeric to the pot. Stir for about 1 minute until fragrant.

Pour in the diced tomatoes, vegetable broth, and lentils. Stir well and bring the mixture to a boil.

Once boiling, reduce the heat to low and let it simmer uncovered for 25-30 minutes until the lentils are tender.

Garnish with fresh parsley or cilantro if desired, and serve hot.
